Cauliflower Pizza

I've been craving pizza lately. They make those pizza's look amazing on the commercials, it's been killing me! So I decided to do a much healthier version using cauliflower crust!





1 head of cauliflower
1 egg
3 tbs parmesan cheese
1 tbsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp cumin
1 tsp oregeno
1/2 cup pizza sauce
1 cup Mozzarella Cheese
10 turkey pepperonis 

  • Preheat oven to 400 degrees.
  • Cut out stem of cauliflower.
  • Break cauliflower florets apart and put in food processor or blender.
  • Pulse twice and then blend until fine.
  • Pour "cauliflower rice" into saute pan and add a splash of water.
  • Cook 5-6 minutes.
  • Remove from heat and let cool.
  • When "cauliflower rice" is cool enough to touch, poor it into a cloth napkin and squeeze all the water out. (This is very important, if it's not dry it won't stick together. Squeeze out as much water as possible)
  • Add cauliflower rice into mixing bowl, add egg, salt, pepper, garlic, cumin, oregano, and parmesan cheese. Mix well
  • Line a baking sheet with parchment paper and pour mixture in the middle of the pan.
  • Pat "dough" mixture out until it is an even, flat circle. Go around the edges and pinch them tight to form a "crust."
  • Bake in oven for 40 minutes.
  • When crust comes out of the oven, let it cool and then flip it over.
  • Spread pizza sauce, add cheese and toppings.
  • Bake at 450 degrees for 6-10 minutes.

Spaghetti Squash Tomato Bake

I've come to LOVE spaghetti squash lately! It's a great tasting, healthy alternatives to spaghetti noodles. I didn't believe it till I tried it and now I can't stop cooking with it! Here's the first recipe I tried with spaghetti squash.
2 cups of cooked Spaghetti Squash
1 tbs Olive Oil
1 tsp Kosher Salt
1 tsp pepper
1 tsp garlic powder
1 Tomato, sliced
1 cup Fresh Basil, chopped
1/2 cup Mozzarella Cheese


  • Preheat oven to 375 degrees. 
  • In large bowl, combine spaghetti squash with oil, salt, pepper & garlic.
  • Cover bottom of 12" baking dish with half the spaghetti squash.
  • Add layer of tomato slices.
  • Sprinkle with cheese.
  • Add layer of spaghetti squash.
  • Add layer of tomato slices.
  • Sprinkle with cheese.
  • Top with fresh basil.
  • Bake for 25 - 30 minutes.

Biquick Pizza



Ingredients:
1 1/2 cup Bisquick Pancake Mix
1/3 cup boiling water
1/2 can of pizza sauce
2 cups of mozzarella cheese
toppings of your choice 
(pepperoni, bacon, jalapeños, sausage, onions, peppers)

  • Preheat over to 450 degrees. 
  • In large bowl mix Bisquick Pancake Mix with boiling water. 
  • Stir with whisk 20 times. 
  • Spray 12" baking pan with non-stick cooking spray.
  • Pat dough mixture out onto pan.
  • Spread pizza sauce all over pizza making sure to cover all edges.
  • Sprinkle with cheese and add toppings.
  • Bake for 15-20 minutes until outside edges look crispy.
